Preheat your oven to 400°F (200°C) and lightly spray a baking sheet with non-stick cooking spray.
In a large bowl, mix together the olive oil, parmesan cheese, garlic, and oregano. Toss the potatoes in this mixture until fully coated. Spread them in a single layer on your baking sheet. Sprinkle with salt and pepper.
Bake for 30-35 minutes, flipping halfway through, until the potatoes are golden brown and crispy.
Remove from the oven and sprinkle with fresh chopped parsley. Serve immediately and enjoy.
